Chobani Blueberry Bread

Using Greek yogurt in desserts is becoming super popular and I’m not ashamed to say I’ve been on the bandwagon for a while. Not only does it make your dessert super moist but it adds PROTEIN!

My favorite thing to make/nibble is Blueberry Bread….for breakfast, snack, lunch, snack, dinner, snack it’s pretty much deelish anytime!

So who wants the recipe?!

Blueberry {Chobani} Bread:

1 1/2 cup

Whole Wheat Pastry Flour

3 tablespoons

Whole Wheat Pastry Flour

1 1/2 teaspoon

Baking Powder

1/2 teaspoon

kosher salt ((optional))

1/2 cup

Brown Sugar

1 teaspoon

Vanilla Extract

 

Eggs

6 ounces/1 container

Chobani Blueberry Yogurt

1 cup
 Blueberries (fresh or frozen, optional if you don’t like berry overkill)
Preheat oven to 375 degrees.  Start by combining flour, baking powder, salt in a large mixing bowl. Add eggs, vanilla and brown sugar… mix thoroughly. Add Greek yogurt. Whisk until everything is well combined and there are no lumps. Pour the wet ingredients into the dry ingredients, and mix until just combined.  At this point, fold in the blueberries. Pour batter into a greased loaf pan and distribute evenly. Put into the oven and bake for one hour, or until the top is golden brown and a toothpick comes out clean. Transfer to a cooling rack and  let the bread cool for at least ten minutes before slicing.

  1. I replied to this a while ago and it disappeared!! Yes I think any type of flour will do just fine!! Let me know how it turns out!!

  2. Just took these out of the oven, they smell DELICIOUS!! I got a little lazy and just used a 6oz container of chobani plain greek yogurt and one and a half banana’s instead of measuring out 3/4 for each but they still look great! Used a chocolate protein shake, I cannot wait for tomorrows breakfast!

  3. This sounds amazing! And the picture makes me want to make some right now…yummy!! Do you think it would come out okay if it was made with regular whole wheat flour? Or coconut flour? I don’t have pastry flour (boo). Thanks for the great recipe!!
