Catch Up!

Hey there GGH world!

It’s been a while since I’ve posted about what I’m doing and more importantly what I’m EATING!

So let’s get to it! As you know Zachary’s 2nd Birthday party was on Sunday, and his Birthday was on Monday, and we have been busy little bee’s everyday since! From enjoying GORGEOUS weather to normal mundane errands everyday has been jam packed…..and I LIKE it! The busier we become the closer we are to Spring/Summer. I don’t know about you but I’m all set with the winter hibernation thing. I’m a little over looking so pale that I could be cast in Twilight, though Stephanie M. if you’re reading….CALL ME! Anyway, I adore Spring and I’m ready for more days that look like this…

Yes that says 58 and yes that’s warm here in Rhode Island right now. It was so nice to get to the park and run/walk with Zachary. Don’t get me wrong I still put in several miles on the treadmill, if you Follow me on Twitter you know I’ve even done 2-a-days lately!(http://twitter.com/GirlGoneHealthy) But, it really is so nice to hit up our fave outdoor play spot, Brayton!!

They have a really nice track and each lap is .30 so hitting a mile is scenic and quick! Plus it’s hilly on the backside and pushing a stroller with a 26 pound toddler is an extra burn! And when I get done making Zachary go in circles he gets to work out too!

Wahwhoo!

Allright let’s move onto FOOD! I have been in the kitchen this week and have come up with a couple of new yummies and brought back a few old faves! I’m just going to rattle off the eats, feel free to grab a pen and paper ;).

Green Eggs, and no ham!

Goodies:

-1/2 cup egg whites

-1 cup spinach

-3 pepperoncini w/tops removed

-1 tblsp minced garlic

-1/4 cup cheese

-1 pinch salt and black pepper

Combine all goodies in food processor/blender and mix until smooth.

In large skillet, coated with cooking spray if needed, scramble eggs! Once done to liking plate and top with cheese.

Chile Lime Chicken Avocado Salad:

Goodies-

-1 Trader Joe’s Chile Lime Chicken patty

-2 cups mixed greens

-1 avocado sliced

-grated cheese

-fat free balsamic vinaigrette drizzle

Cook TJ’s patty until done. Slice patty and avocado, use them to top mixed greens. Sprinkle with cheese and drizzle vinaigrette over everything.

Shakeology Green Monster:

-1 single serve pouch Chocolate SHAKEOLOGY

-1 1/2 cups Light Vanilla Soy Milk

-1/2 frozen banana

-1 pouch frozen strawberries (about 6oz’s)

-1 cup fresh baby spinach

Combine everything in blender, blend and enjoy!

Lunch on the run, here’s a peek! Subway- grilled chicken, lettuce, tomato, yellow peppers, light ranch on 9 grain bread toasted.

Vegetarian Sloppy Joe’s:

Goodies-

-1 bag Morning Star Farms Beef Crumbles

-1 1/2 cups sliced red, yellow, green peppers

-2 tsp each red chili flake and garlic powder

-pinch each sea salt and black pepper

-1 can sugar free tomato paste

In large skillet, coated with cooking spray, saute meat crumbles and peppers. Add in chili flakes, garlic powder, salt and pepper-stir well. Pour tomato paste over everything, and when can is empty fill 1/2 with water and add that to the skillet. Allow mixture to simmer and thicken.

Once thick, spoon onto flatbread, top with 1 slice of soy cheese and enjoy! I served mine with mixed veggies!

Also in exciting news I had the PLEASURE of being interviewed on It’s Your Health Radio with Lisa Davis! But this interview was super special because I was able to “meet” one of my weight loss inspirations, Kristin Steede from Biggest Loser Season 7 on NBC!

I should have a podcast of the interview soon if you missed it…..but the best part is Lisa invited Kristin and I to come on the show MONTHLY to do a segment!!! EEEEEEKKKKKKK I’m so excited and so thankful! If it wasn’t for each and everyone one of you reading, this wouldn’t be possible! Thanks so much for the love, support, and the clicks each day.
