30 Days Vegan, Day 1

Hello!

Today is Day 1 of my 30 Days of Vegan challenge. I wanted to do this 1 to prove to myself that I could absolutely do anything I put my mind to, and 2 prove to people that you can absolutely do anything you put your mind to. And let me just say, I applaud all of you Vegans who live this 24/7/365. Here are my goodies from Whole Foods that will get me thru week 1!

 

I did all right today but I really missed my mid afternoon Chobani with granola on top. That is usually my saving grace, the granola is heaven and the protein packed Chobani fills me up. However, I did thoroughly enjoy my yummy So Delicious Coconut yogurt!!!

Here’s what Day 1’s menu looked like!

Breakfast:

 

1 1/2 cups Light Vanilla Soy Milk

3/4 cups strawberries

3/4 cups blueberries

2 cups fresh baby spinach

6 to 8 ice cubes

Blend and serve!

Lunch:

 

Sauteed-red/yellow/green pepper strips, 2 large zucchinni, 1 large fennel. Used EVOO to sautee, and seasoned with 1/4 tsp sea salt. black pepper, garlic powder, basil, and oregano. Plated over fresh baby spinach and gave it a drizzle of Balsamic Vinaigrette. I made a huge pan of this and set aside unused portion for dinner!

Snack:

 

1/4 cup So Delicious Coconut Vanilla Yogurt with a handful of strawberries and blueberries

Dinner:

 

1 box farfalle pasta (I used Whole Foods Organic)

1 cup Tomato Puree

1 container of mushrooms, sliced

Left over veggies from lunch

Cook pasta to liking, set aside. In large skillet sautee mushrooms until brown. Add in left over veggies and continue to warm. Pour tomato puree over veggies and allow to simmer and thicken. Mix veggies and pasta. Serve warm!

And for dessert……

Dear Lord are these wonderful or what?!!! I LOVE So Delicious products, Vegan or not! I want to live on Turtle Mountain!

So as you can see Day 1 wasn’t that bad and I enjoyed some DELISH food! Plus I tried new things like fennel! It is so tasty, I recommend cooking with it ASAP!

I’m looking forward to tomorrow! I feel really good and so far I’m not missing anything except my granola bars!

  1. Hey, nice write-up. Ahh, can’t live without good ol’ protein! For me, besides drinking healthy shakes instead of cheating, I have discovered that the real way in getting rid of them is to simply lower my whole bodyfat to less than 10%. I’ve generally been a follower of a Paleolithic regimen. It is much more natural and how Mother Nature intended for us to eat. Check it out sometime and drop me an email with your opinions.   3. Congrats on doing the challenge — but like the pp mentioned, Shakeology is not vegan (unfortunately) 🙁

  4. I think it is awesome that you are doing this 30 day challenge. Going vegan has many benefits and great reasons: health, world economics, environmental concerns, and of course animal rights/ethics concerns.

    When I saw you posting about Shakeology and it being vegan…I was pretty excited as I am a huge BeachBody/TurboJam fan. Though, I just checked out the site and both flavors list milk based ingredients under allergens. Inspecting the label turned up whey protein as the problem. Soetimes I wonder why companies add such a small amount of dairy to their product. There is plenty of other protein in it and they’ve cut out two markets: vegans and people with dairy allergies.

    Anyway, good luck on your challenge. That’s how I started out and I’ve been vegan for many years now.

  5. Congratulations on getting through Day 1! It really does look like you did it deliciously. As a 5-year vegan, I can tell you that as you discover new foods and creative ways to prepare them, it only gets more delicious. Products like So Delicious coconut milk ice cream and yogurt certainly make it easy. Everything you ate looks really wonderful, in fact, I’m so inspired by your morning smoothie, I’m going to make one right now with kale, dates, bananas, frozen berries, and So Delicious coconut milk!

  6. Try almond milk next time instead of soy. Naturally lower in calories (60 a serving for regular, 90 a serving for vanilla) without any artificial sweeteners. I love the nutty taste it gives to smoothies!
